Banana Bread

  • Dry Ingredients:
  • 1 1/4 cups whole Wheat Flour
  • 3/4 cup whole wheat pastry flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 1/4 tsp. sea salt
  • wet ingredients:
  • 2 cups mashed banana
  • 1/2 cup maple syrup or other liquid sweetener
  • 1/3 - 1/2 cup rice milk or fruit juice
  • 1/4 cup natural light oil
  • 1-2 tsp. real vanilla
  • optional: 1/2 cup nuts or dried fruit
  • Preheat the oven to 350 degrees. mix the wet and the dry ingredients separately. Make sure you really mix the wet ingredients well( I suggest a blender or electric mixer) Sift the dry ingredients into the wet. Scoop the mixture into a lightly oiled and floured loaf pan and bake until nicely browned on top(45-60 minutes), check with a toothpick. Eat it up!
